Easy hot cross buns recipe for Good Friday

Hot cross buns are spiced, sweet buns usually made with sultanas or raisins. These yummy buns can be enjoyed with a bit of butter or jam and are traditionally eaten on Good Friday. The reason for this is that traditionally dairy products were banned during Lent and Good Friday marks the end of Lent.   They are pretty easy to make so in case you need to plan ahead of time to get your ingredients here is what you need and how to make them.

Easy hot cross buns recipe – makes 12

Ingredients

225 ml Milk
50g Butter diced
2 Eggs Beaten
500g Strong White Bread Flour
50g Caster Sugar
7g Fast Action Dried Yeast
1 tsp of Cinnamon
½ tsp of mixed spice
150g raisins or sultanas
75g mixed fruit
100g Plain flour
2 tbsp of Marmalade or Apricot Jam
Pinch of salt

How to make

  1. Make the dough – Heat the milk in a pan until just below boiling point
  2. Stir the butter into the pan until melted
  3. Leave to cool for 5 – 6 minutes
  4. Then stir in the beaten eggs
  5. Sift the flour into a bowl
  6. Add the Caster Sugar, yeast, cinnamon, mixed spice and salt to the bowl and stir
  7. Make a well in the centre
  8. Pour in the milk mixture and form into a sticky dough
  9. Tip the dough onto a floured work surface and knead for 10 minutes till soft
  10. Transfer to an oiled bowl, cover with a tea towel and leave a warm place for an hour till it’s doubled in size (have a cuppa)
  11. Flatten the dough slightly and sprinkle the fruit in.
  12. Knead the fruit in for 4 – 5 mins
  13. Make into a ball and divide into 12 pieces
  14. Place on a baking sheet leaving approx 4 cm between each
  15. Cover with a tea towel and leave to prove for 20 minutes somewhere warm
  16. Preheat the oven to gas mark 6, 200°C, fan 180°C
  17. Mix 100g plain flour with 6 tbsp of water to make a thick paste
  18. Spoon into a piping bag with a 5mm nozzle
  19. Pipe a cross onto each bun
  20. Bake in the oven for approx 20 minutes
  21. Leave the buns to cool
  22. heat the Marmalade or Jam in a pan and glaze the tops of the buns with it
